Corn Dogs

For Christmas last year, I asked Cam what he wanted to get for his mom. She loves to cook and we were in the process of doing a complete kitchen overhaul to assure that all of her appliances, pans, utensils, etc. were gluten free. Upon asking him this question, without hesitation he said, ” a fryer”. We had never had a fryer before but, given our situation, it seemed like a good choice for a gift. Chicken tenders were a regular staple in his diet (what 12 year old doesn’t love those) and things like beignets were a treat. I often watched my wife flinch back from the stove top when frying things in a shallow pan and having the oil pop. His safety and hers convinced me that the fryer idea was a winner.

Below is one of our more successful fryer recipes; homemade corn dogs. Yes, I know it’s not the healthiest thing but we’re talking a teenager here. He’s all for them and his first word after trying one was “awesome”. So, here’s a simple but satisfying gluten free recipe to use, whether you are lucky enough to have your own fryer or not. Corn Dogs

  • 1/2 cup All Purpose Gluten Free flour
  • 3/4 cup Cornmeal
  • 1 teaspoon Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 dash Cayenne pepper
  • 1 egg
  • 1/2 cup milk / buttermilk
  • Hot dogs (we cut ours in 1/2 and use wooden skewers)
  • Corn Starch

Whisk all dry ingredients (except corn starch) together in a bowl. Add egg and milk. Whisk until smooth. Dredge hot dog in corn starch. Dip in batter and fry until brown. Approximately 2 minutes on high oil setting.
